Jamaican Bread Pudding
Jamaican Banana Bread
mmmm...

Even the novice can make Jamaican bread pudding taste good. This is one of the easiest Jamaican dessert recipes.

Ingredients

Your favourite brown or white bread (or both)
butter or margarine
3 eggs
3 cups milk
4 tbsp brown sugar
1 tsp vanilla
1 tsp grated nutmeg
1/4 tsp cinnamon powder
A splash of overproof rum (optional, but it does nice up the end result even more!)
3/4 cup raisins or soaked fruit (Learn how to soak fruit in this Jamaican rum cake recipe)

If not already sliced, slice enough bread (about 10 to 12 slices) to fill an 8"X 11" ovenproof dish or pan. You may remove crusts if you wish.

Spread each slice with butter or margarine, and cut into strips or squares.

Mix together the milk, sugar, vanilla, nutmeg and cinnamon. You can vary the amount of sugar according to your preference.

Beat eggs lightly, then add milk mixture and mix well. Add the rum if desired.

Grease the dish or pan. Cover the bottom of the pan with a layer of bread. On top of this sprinkle a third of the raisins or the soaked fruit. Follow with alternating layers of bread and fruit until the dish is almost full. Make sure there a few raisins on the final layer of bread.

Pour enough milk mixture to cover the bread, and leave for an hour or until the bread has properly absorbed the mixture. If time is short, use the back of a fork to press down the bread so it absorbs the liquid faster. Pour on more mixture if needed, so that the bread is completely moistened.

Bake at 350F (180C) until pudding is firm, and the top is golden brown.


Bread pudding is best when eaten warm, but when I'm feeling lazy and take leftovers from the fridge, I'll eat it cold too. If it's a little dry, just pour on some warm milk.

This Jamaican bread pudding is sure to impress. If you've never baked before, this is a great confidence builder!



Now here's a perfect way to use up those bananas that have gotten a little too soft.

Jamaican Banana Bread Recipe

Ingredients

1/2 cup margarine
1 cup brown sugar
2 eggs
2 cups mashed ripe bananas
2 cups flour
3 tsp baking powder
1 tbsp vegetable oil
2 tbsp honey
1/2 tsp cinnamon
pinch of nutmeg
1 tbsp white rum (optional)

Cream butter and sugar together. Mix eggs with creamed butter and sugar. Mix bananas into creamed mixture.

Sift flour with baking powder, cinnamon and nutmeg.

Add dry ingredients to creamed mixture, and mix well. Mix in vegetable oil and white rum.

Pour into a greased loaf pan. Before baking, drizzle honey on top.

Bake at 350F (180C) for 1 1/2 hours.

The beauty of Jamaican Bread Pudding and Banana Bread is that the ingredients are so easy to find. And the outcome is sure to be delicious.
